Since I´m in a eat right & healthy mood to achieve my goal, I´ve
been searching the web for recipes to spice up my menu. I´m a little
boring or better yet, not very creative when it comes to cooking (I
don´t like it) So, if I only eat chicken breast fillets and lettuce
salad (which is more or less what I imagine diet food to be like) you
can bet that it won´t be long before I quit or slip...
Of the recipes I´ve found and cooked BTW (that means that the come up
like the photos and that are easy) and that also taste great, the Zucchini Chips recipe is the BEST! The orioginal recipe is from thejoyofcleaneating.comI
did some changes because, apart from the bread crumbs it asked for, I
used some oats and didn´t used tha entire amount of Parmesan
because...let´s face it, Parmesan cheese isn´t the lightest of cheeses .
Any way, it turned out delicious! I ate the whole tray as a main dish.
So feel free to serve them as side dish or appetizer. The best part?
They´re ready in 1/2 hour!

- 1/4 taza pan rallado *aqui sustituí parte por el salvado de trigo y avena
- 1/4 taza queso parmesano rallado (opcional o pueden colocar sólo un poco o quizá otro tipo de queso)
- 1/8 cdta. pimienta negra
- 1/2 taza de harina
- 1 taza de leche
- 1 cdta. vinagre de manzana
- 2 1/2 tazas de calabacín cortado en rodajas (son como 2 calabacines pequeños)
- Precalentar el horno a 425º F / 218Cº .
- Colocar en bowl chato las migas, el queso (si se va a utilizar) y la sal y pimienta.
- En otro bowl colocar la harina, la leche y el vinagre. Batir suavemente hasta que esté mezclado. Tener cuidado de no sobrebatir.
- Mojar los calabacines en la mezcla líquida y luego por ambos lados en la seca.
- Colocar los calabacines en una bandeja con papel para hornear
- Hornear por 30 minutos, dandoles la vuelta a los 15 min.
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese(guess you can use other types os cheese)
- 1/8 tsp black pepper
- 1/2 cup whole wheat flour
- 1 cup milk
- 1 tsp apple cider vinegar
- 2 1/2 cups sliced zucchini
- Preheat oven to 425ºF / 218ºC.
- In a flat bowl or plate combine breadcrumbs, cheese and black pepper.
- In separate bowl add flour, milk and vinegar. Gently stir but do not over stir.
- Dip zucchini slices in liquid mixture and then coat both in dry mixture.
- Place coated zucchini slices on a baking sheet lined with baking film
- Bake for 30 minutes, turn the slices over halfway through cooking.
