maridando de Andalucía a Asturias


Asistir a una cata en el Estudio de Ana es siempre un placer para los sentidos! Esta vez, y me van a permitir la licencia, además estuvo de lujo y con celebrity y todo!! La cata la dirigía Juan Luis García, uno de los 10 mejores sumilleres de España y me toco sentarme a su lado!!!! Lástima que para el momento no estaba tan enterada del asunto sino me hubiese hecho una pic, jejeje Pero vamos por orden porque si no me voy por la tangente y….

La cata comenzó con un guiño al sur de España, manzanilla, fino, amontillado & oloroso y de allí nos transportamos al norte y catamos vinos de Asturias, específicamente de Cangas del Narcea, un terruño que sus dueños cuidan con mucho tesón y que su alta concentración de pizarra le aporta a estos caldos un giro singular. El menú, como siempre, suculento y maridaba a la perfección con cada uno de los 6 platos que nos cocinó mi chef favorito, Freddy Salmerón. 

Attending a wine tasting at the Estudio de Ana is always a pleasure for the senses! This time, and please allow me, it was also divine and with a celebrity and all! The tasting was given  by Juan Luis Garcia, one of the top 10 sommeliers from Spain and I got to sit next to him ! ! Too bad that at the time, I was not as aware of such a fact. I would have taken ​​a pic, lol.
But let me gather my thoughts, I don´t want to wander  ….  

The tasting began with a wink to the south of Spain, with Manzanilla, Fino (Sherry), Amontillado and Oloroso.  From there, we traveled north and tasted wines from Asturiasspecifically from Cangas del Narcea a terroir that the owners care with love. Its high slate concentration gives these broths a singular pivot . The menu, as always, succulent and paired perfectly with each of the 6 dishes that Freddy Salmeron, my favourite chef, cooked for us.

Como es usual en ellos, te reciben con una crema para abrir el apetito. Esta, si mal no recuerdo, era de auyama y ¡cómo me transportó a mi niñez!, no sólo por el sabor sino por la forma juguetona de presentarla.

As usual the Studio opened the tasting with a soup. This one, if I remember correctly, was pumpkin and how was I transported to my childhood!  Not only for the taste but for the playful way of presenting it.

Ya para entonces catábamos la Manzanilla "La Guita" de Hijos de Rainera Perez Martin de la zona de Sanlúcar de Barrameda (Cádiz, Andalucía). Una manzanilla suave, fina y elegante gracias al aire costeño del atlántico que baña a estas cepas. Huele a flor, levadura y almendra y quedaba estupenda con este plato que he bautizado Deleite Máximo.

By the time, we were already tasting the  Manzanilla "La Guita" by Rainera Martin Perez Son´s from Sanlúcar de Barrameda (Cádiz, Andalusia). It was soft, refined and elegant thanks to the Atlantic coastal air that bathes these grapes. It smelled of flower, yeast and almonds and it was so great with the dish  that  I baptised it Maximum Delight.

Para el siguiente plato ya tocaba un fino, en este caso La Bota de Fino Nº35 Macharnudo Alto del Equipo Navazos. Este es mucho mas corpulento;  según decían los entendidos, le falta la elegancia de la manzanilla…. lo bueno es que iba de un bien con la alcachofa!! que es, por lo que entiendo, una de las mas difíciles de maridar.

For the next dish, a sherry; in this case La Bota de Fino # 35 by Macharnudo Alto Navazos Team. This one is much more robust, said the experts, but it lacked the elegance of the Manzanilla .... the best part was that it went great with the  artichoke that is, from what I understand, one of the most difficult things  to pair.

Los siguientes dos sólo los mencionaré; Amontillado fino "El Tresillo" y Oloroso seco "Villapanés." Hay un post sólo para ellos cuando hicimos la cata de Amontillados, Finos & Olorosos de las bodegas Emilio Hidalgo. Si les puedo decir que el Oloroso quedaba infinitamente mejor con el postre de Chocolate blanco y queso azul de aquella vez…. o es que quizá, por haber sido aquella mi primera experiencia con un Villapañes, quedé mas impactada!!

The next two I´ll only mention, Sherry Amontillado "El Tresillo" and dry Oloroso  "Villapanés." These have their own post from when we attended the tasting by the wineries Emilio Hidalgo. I do have to tell you that the Oloroso was infinitely better with the white chocolate and blue cheese dessert we had that time around.... or perhaps, it was because it was my first experience with a Villapanés, and I was flabbergasted!

**El all-i-pebre ("ajo y pimentón" en valenciano) es una salsa típica valenciana utilizada para cocinar pescados. 
**The all-i-pebre ("garlic and red pepper" in Valencian) is a typical Valencian sauce used to cook fish.



Para finalizar, el plato fuerte de la noche, los vinos de Asturias de las Bodegas Dominio del Urogallo: Retortoiro, La Zorrina & Pesico Tinto. Son vinos realizados con uvas albarin, negro verdejo y carrasquin y, las cepas son centenarias. Como decía al inicio, en el vino están presentes las características del entorno en el que crece, una tierra minera, con mucha pizarra. Es un viñedo de corte ecologista en el que dejan a la viña a sus anchas para que se desarrolle libre y naturalmente. Los tres vinos que catamos eran jóvenes; de hecho, los embotellaron para nuestra cata y para mi fueron un grato descubrimiento.

Finally, the highlight of the night, the wines from Asturias by Dominio de Urogallo winery: Retortoiro, La  Zorrina & Red Pesico. These are wines made ​​with Albarin, black Verdejo and Carrasquin grapes and the strains are centenarians. As I said at the beginning, the features of the environment in which it grows, a mining land, are present in the wine. It is an enviromentalist vineyard, where the vine is left alone and free to develop naturally. The three wines we tasted were young, in fact, they were bottled for our tasting that night. For me, a very a pleasant discovery.

Para finalizar, como siempre con broche de oro y con lo que mas me gusta, sencillamente chocolate!! claro está con un Pedro Ximenez que le queda de chuparse los dedos.

Finally, as always a gold medal with what I like best, chocolate!! Of course with Pedro Ximenez and it was  scrumptious.
